Ingredients for Chinese chili chicken

  • 500 grams of Boneless Chicken
  • Egg 1
  • 2 cups of Chicken broth or water
  • Corn starch/ corn flour, 2 tablespoons
  • 2 Green onions, chopped
  • 1 tablespoon of Garlic paste
  • 1 tablespoon of Oil
  • 1 teaspoon of sugar
  • 2 tablespoons of soya sauce
  • 6 Green chilies, finely chopped
  • A pinch of Ajinomoto
  • Freshly ground white pepper, 1/2 teaspoon
  • Oil to fry chicken
  • Salt to taste

    Preparation method

Clean the chicken and cut them into eatable bits of about an inch. Use a bowl to add one tablespoon of corn flour, egg, soya sauce and salt, mix well, marinate the chicken in the mixture, and keep it aside for about 15 minutes. Marinating ensures absorption of the ingredients and adds to taste. Heat the Oil in a shallow pan and deep-fry the chicken pieces until they become Golden brown in color. If you over cook and make it dark brown, the taste of the dish will be lost. Use a separate Wok and heat a tablespoon of oil and add green chilies and garlic paste and saute for a few seconds. Add two cups of Chicken broth or water, in case of non-availability of chicken broth.

Bring the contents to boil and then add sugar, salt, pepper powder, ajinomoto and the reaming soya sauce. Add to it the fried chicken pieces and cook for a few minutes. Dissolve the remaining corn flour in w/2 cup of water, add to the curry, and stir constantly to avoid formation of any lumps. Cook for another three minutes. Taste to verify whether any more salt is required. In case if you feel the curry is of lesser taste, you can add salt to your taste. You can now serve the Chinese Chili chicken with chopped onion. This Chinese chili chicken is also a great combination to go with steamed or boiled rice.
