Stew Chicken recipe

This recipe is to guide you to make a wonderful dish called Brown Stew chicken .It is also otherwise known as Fricasseed chicken. The process involved in making this dish is to brown the chicken and simmer it in richly flavored gravy. You can cut a full chicken and cook this dish and it is so easy and fun to prepare this dish. The trick involved in making the chicken tastier is that the chicken meat is seasoned well before you start the cooking. You may even start seasoning the chicken the previous night with spices and herb so that its juices would be incorporated with the meat. Incase you suddenly thought of preparing this dish, and you do not have time to season for a whole night, never mind, this chicken dish can be prepared even if you just marinate it for an hour before its cooking.

Instead of browning the chicken, you can also bake the chicken in an Oven, but the same level of depth of flavor is not guaranteed. The old style of browning the chicken is considered best. That is precisely due to the reason that the stuff left in the pan after frying the chicken goes in the gravy to make it tastier. As an added tip, you can just add two teaspoons of sugar with the chicken seasonings, which adds flavor and darker color.

Ingredients Required

  • Chicken, skinless and cut in pieces 3lbs
  • Chicken Seasonings Scallion stalk 2, chopped, white portions only
  • Large cloves garlic, minced
  • Black pepper 1/2 teaspoons
  • Sugar two teaspoon
  • Salt 2 teaspoons
  • 2 tsp Salt

    Ingredients for making Gravy

  • 1 Large Green onion, finely chopped
  • Red and Green bell pepper,
  • each chopped Cooking oil, 1/2 cup (to fry chicken)
  • 1 tsp Pepper sauce
  • 1 Sprig of thyme or 1 tsp dried
  • Tomato ketchup 1 tablespoon,
  • 2 cups Hot water
  • 1 tsp salt or to tast

    Preparation method

    Before the start of cooking, neatly wash the chicken and using a paper towel thoroughly dry the chicken. Chicken is to be seasoned with garlic, green onion, black pepper, sugar and salt. Depending upon the time available, marinate the chicken overnight or just for an hour before you start frying the chicken. Fry the chicken on high heat in cooking oil for about three three minutes, occasionally stirring until it is browned on all the sides. Remove the chicken from the pan and keep it aside.

    After removing half of the cooking oil in the pan, fry onions and bell peppers until onions become translucent Do not over heat and char them. Now, add the hot pepper sauce, tomato ketchup, thyme and a cup of hot water and slowly stir. Add required salt after tasting the gravy. Add the fried chicken to the gravy. Add one more cup of water and on low heat and covering the pan allowing it to simmer for 30 minutes, watch the chicken become tender and gravy being thickened. The dish can be served with steaming hot rice and salad.
