Split chicken breast recipes

Bone-in chicken breasts make a wonderful meal when roasted to perfection with garlic, herbs, and a little olive oil. This recipe is all about baking split chicken breasts with a delicious mixture of spicy mustard, curry powder and a mixture of honey which can be your everyday meal. You can serve a simple green salad or sliced tomatoes on the side. It takes a preparation time of about 10 minutes and a cooking time of an hour and 15 minutes and can yield four serves.

Ingredients required

  • 4 split chicken breast halves, bone-in, skin removed or left on (as you wish)
  • 6 tablespoons of butter, melted
  • 3 teaspoons of curry powder
  • 1/8 teaspoon of pepper
  • 1/3 cup of Dijon or spicy brown mustard
  • Freshly ground pepper
  • 1/2 cup of honey (if you need)

    Preparation method

    Blend well the honey, mustard, butter, curry powder, pepper in a bowl, and keep aside. Trim and remove the excess fat on the chicken and also remove the skin (choice of keeping the skin is yours). Arrange the chicken breasts in a greased baking pan by spraying oil. Coat the chicken with the honey mixture that has already been made and kept aside. Cover the chicken with foil and refrigerate for about an hour or two hours. Remove the chicken from refrigeration and cover tightly with foil. Heat it the oven at 375 degrees F for about thirty minutes, basting every 10 or 15 minutes. Remove from the Oven and prepare the dish for serving.

    Generally boneless, skinless chicken breasts are a bit more versatile, but the split chicken breasts are sold at half the cost of skin and the skin and bone really keep the chicken more moist and flavorful.
