Spanish chicken recipe

This awesome dish demands preparation time of 40 minutes to 50 minutes and a cooking time of about an hour. The dish would yield to eight to ten servings. Please do not change the order of the preparation steps.

Ingredients required

  • Eight chicken thighs, skinless
  • I large red onion finely chopped
  • 2 green peppers, medium sized, sliced into small pieces
  • 2 cans of diced tomatoes, 14 1/2 Oz each
  • White long grain rice 2 1/2 cups
  • 10 Oz of Peas (Frozen)
  • Salad, olives chopped 1 1/2 cups
  • 2 Garlic cloves, sliced fine
  • 1 can of 14 Oz, Chicken Broth
  • 1 tablespoon Olive oil
  • 1/4 teaspoon of coarse black pepper
  • 1 tablespoon of Paprika
  • 1/2 teaspoon of salt
  • 3 cups water
  • Preparation method

    Oven has to be preheated to 350 degrees F.

    Use a Large sized oven to heat oil on medium-high until it becomes hot. Season the chicken all over with pepper and salt. Sprinkle all over the chicken with salt and freshly ground black pepper. The chicken has to be cooked in two separate batches for six minutes each, until they turn into to golden brown in color on all the sides. Transfer the chicken pieces, by using a tong, to a medium sized pan for the next stage of roasting the chicken. The chicken in the pan has to be covered with a foil and baked for about 30 minutes. You can use a thermometer to read the internal temperature of the chicken to find out whether the chicken is cooked, or when you pierce a knife and if clear juice runs, you can be assured that the chicken is well cooked.

    In the meantime, using the same Oven you have to cook the onion, green peppers and garlic for about 12 minutes. If you hate clocking time for each stage of cooking, stir and watch whether the vegetables have become translucent. Now, add rice, water, chicken broth, and tomatoes and boil on high. Then reduce the heat, let it simmer after covering for about 10 minutes. Now is the time to add and stir the olives and frozen peas. Two glass or a ceramic baking dish has to be greased, and toss in the rice mixture half each into the dishes. One dish can be covered and freeze for your future use, and the other to be covered and baked for about 25 minutes. Before removing the dish, check whether the rice is fully cooked and all the liquid in the mixture has been fully absorbed.
