Sanjeev Kapoor chicken recipes

Chicken Curry is one of the basic and of the best of Kapoor chicken recipes. The preparation takes about 20 minutes and another 25 minutes for cooking this wonderful dish. In a total time of about 45 minutes, you can prepare a spicy chicken dish to manage four servings.

Ingredients required

  • Chicken 750 grams made into eatable sized bits
  • 5 medium sized red onions, finely sliced
  • 1 tablespoon of ginger paste
  • 1 tablespoon of Garlic paste
  • 5 tomatoes of medium sized fully ripened and finely chopped
  • 1 tablespoon of chopped coriander
  • 4 tablespoons of ghee/ vegetable oil/ canola oil
  • 1 inch stick of cinnamon coarsely powdered
  • 5 cloves
  • 5 green cardamoms
  • 1/2 teaspoon of turmeric powder
  • 2 tablespoons of coriander powder
  • 1 teaspoon of Red chili powder
  • 2 tablespoons cumin powder
  • 1 teaspoon of gram masala powder
  • Salt- to suit you taste

    Preparation method

    Use a thick-bottomed pan to heat the ghee/ vegetable oil. Keeping the heat on low, add green cardamoms, cloves, and saute for about thirty seconds. Add the finely chopped Onions and saute until they become golden brown in color. Add ginger paste and garlic paste, continue to saute for about two minutes, and continue to stir. While stirring, add turmeric powder, red chilly powder and cumin powder and mix them well. Have a watch over the heat, as overheating may char the ingredients and spoil the dish. Add the finely crushed tomato paste and stir again. While stirring you may notice, a stage when the oil is separated from the ingredients already added. At this stage, add the readily kept chicken pieces and required salt to taste and cook on high heat for about five minutes. Add two cups of water and bring the contents to boil and cook the chicken fully until it is cooked. Now, add the Garam masala (combination of spices) and garnish with coriander leaves.

    Put in as many chicken pieces as the skillet can hold. Brown the chicken in hot oil on both sides

    When browned, reduce heat and cover skillet; let cook for 30 minutes (the chicken will be cooked through but not crispy)

    Remove cover, raise heat again and continue to fry until crispy

    Drain the fried chicken on paper towels

    Depending on how much chicken you have, you may have to fry in a few shifts. Keep the finished chicken in a slightly warm oven while preparing the rest
