Ingredients required

  • 11/4 lb of boneless, skinless chicken breast halves
  • (A little longer cooking time is required when using larger chicken breast)
  • 2 cups of Broccoli florets
  • 2 cups of uncooked instant white rice
  • (For the dish to be creamier, use rice to 1 1/2 cups of rice).
  • 1 can (10 3/4 Oz) of Condensed Cream of Chicken Soup
  • 1/4 teaspoon of paprika
  • 1 tablespoon of vegetable oil
  • 1/4 teaspoon of ground black pepper
  • 1 1/2 cups of water

    Preparation method

    The vegetable oil to be heated in a ten-inch skillet over medium high heat. Add the chicken breast and stir for about ten minutes until browned on both sides. Take care not to char the chicken with too much of high heat. The chicken should be well cooked and look golden brown and ensure that all the pink color of the chicken vanish. Now remove the chicken from the skillet.

    Stir the soup, paprika, water, and black pepper in the skillet and allow it to boil. Add in the broccoli and rice. Return the chicken to the skillet after reducing the heat. Additional Paprika and black pepper are to be sprinkled on the chicken. Cover and cook for five more minutes or until the chicken is fully cooked through. You can finish off the cooking of chicken in the oven with sprinkling some cheese on top of the chicken. Add a little of the stock to the cooked rice and it will absorb the stock and when served with the chicken curry, the combination of chicken with rice becomes unbeatable.

    General Tips

    Try to eat more soya beans or other soya based foods. You need to consume more fiber that can be found in fruits, vegetables, pulses and beans. Try to take kidney beans and lentils along with whole grains if possible. Refrain from the intake of hydrogenated oils that can be found in few biscuits and margarine. If you are drinking a tinned soup mind about the salt content in it. Do not intake too much of it. Also, avoid other processed and packaged foods and drinks to remain healthy. If you want to take flavonoids then take more apricots, citrus fruits and carrots. You can also consider taking grape seed extracts.
