Ingredients required

  • 3 lbs of chicken drumsticks and thighs (mixture)
  • 1 tablespoon grated, fresh ginger
  • 1 medium onion, finely diced (about 1 cup)
  • 4 cloves garlic, minced (about 4 teaspoons)
  • 2 tablespoons unsalted butter
  • 1 (15 Oz) can crushed tomatoes
  • 2 (15Oz) cans chickpeas, drained
  • 1/2 cup heavy cream
  • 1 1/2 teaspoons paprika
  • 1/4 teaspoon cayenne pepper
  • 1 teaspoon ground, turmeric
  • 1/2 teaspoon ground, black pepper
  • 1 1/2 teaspoons ground, coriander
  • 1 tablespoon ground cumin
  • 1 pound fresh spinach leaves, trimmed
  • 1/2 cup chopped fresh, cilantro leaves
  • 1/4 cup fresh juice from 2 to 3 lemons
  • Salt (required amount)

    Preparation method

    Heat the butter in pressure cooker over medium heat until foaming subsides. Add garlic, ginger and onions to cook and stir for about five minutes frequently, until the whole things turn to pale brown. Add paprika, turmeric, cayenne powder, black pepper, coriander and cumin and stir frequently for about 30 seconds to get a fine aroma. Add crushed tomatoes and spinach and stir occasionally for about 2 minutes until the spinach is wilted. Add the drained chickpeas, lemon juice, half of cilantro and chicken pieces. Stir to combine the whole lot and seal pressure cooker and heat to high pressure. Cook for about 5 minutes after reaching the high pressure. Allow the cooker to cool. After removing the lid, add the heavy cream and simmer, stir frequently until sauce gets thickened. Stir in the lemon juice and season to taste with required salt.
