Portuguese chicken recipe

Making Portuguese chicken at home is easier than you thought. The process involved is about flattening a whole chicken, drizzling and marinating with a spicy sauce. This Portuguese chicken is an inspiration for original cooking of a dish in a terracotta jug. The great difference from earlier cooking and the present is that the method of doing this is simplified but keeping the tangy, smoky and sweet flavors. The chicken will be tastier as a left over due to the melding of the juice. Serving the Portuguese chicken with a green salad or bread adds beauty to the dish. Preparing this dish takes about 15 minutes and cooking about 40 minutes and the dish could make four servings.

Ingredients required

  • 2 fresh or frozen, thawed chickens (about 550g each)
  • 60ml or 1/4 cup of olive oil
  • 80ml or 1/3 cup of fresh lemon juice
  • 4 garlic cloves, crushed
  • 1 long fresh red chili, chopped finely
  • 2 tablespoons brown sugar
  • 2 tablespoons dried oregano
  • 2 tablespoons sweet paprika
  • Freshly ground black pepper
  • 1 teaspoon salt
  • Lemon wedges

    Preparation method

    Preheat oven to 200 C.

    Keep the chicken down side, cut down on both sides of the backbone, and then discard. Turning the chicken upside, and push down to flatten. Tuck the wings under and pat dry with paper towel. Using a knife, make several long cuts into chicken meat and place in a glass or ceramic baking dish. Mix the lemon juice, sugar, oil, garlic, paprika, oregano, chili and salt in a bowl and season with pepper. Pour the mix over the chicken and apply well to coat. Cover the chicken with plastic wrap and place in the fridge for about 6 hours for flavors to develop.

    Place in a roasting pan the chicken, marinade, and start roasting for about 45 in the oven, occasionally basting with the pan juices, until it become brown. Juice should run clean when chicken is pierced with a knife. Remove from oven, cover with foil and set aside for 5 minutes to rest. Cut each chicken in half and serve with lemon wedges and salad. In the meanwhile, for making the salad, place the onion, tomato, olives, and cucumber in a bowl. Keep the lemon juice, oil, and oregano in a jar and shake it to combine. In addition, you can season with required salt and freshly ground pepper. Drizzle over salad and toss to combine. Your Portuguese chicken is ready to be served.

    General Tips

    If you are suffering from gout problems, you might need to try cherries. They are good for gout and give a quick remedy. They contain compounds that help to neutralize the uric acid in the blood. Cherries also are a source of anti-inflammatory compounds. You can also try strawberries, cranberries, raspberries and black currants for a similar effect. Take at least 20 of them. Avoid consumption of chocolates too much as they have fat and caffeine. Milk is good; however, excessive drinking can stimulate the stomach to secrete more acid.
