  • Five (12-inch) flour tortillas
  • 3 cups of Shredded and divided Cheddar cheese,
  • Enchilada sauce, one can of 10 ounce
  • Sliced black olives, one can of 6 Oz

    Preparation Method

Preheat an oven to 350 degrees F (175 degrees C).

Chicken has to be placed in a large pot and covered with water. Boil the pot over high heat and then slowly reduce to medium and allow simmering for about 10 minutes. Ensure that the pieces of chicken are no longer pink in color. Shred the chicken and set aside. In a saucepan, combine the sour cream, chicken soup cream, and powdered chili. Stirring occasionally, allow it to simmer over low. Heat to be turned off and the dish covered to keep it warm.

Butter has to be heated over medium heat in a skillet and after adding the onion, stir and cook for about five minutes until the onion becomes translucent. Add the Shredded chicken, taco seasoning, chopped green chilies, a bunch of green onions and stir. After adding water, it should simmer for about 10 minutes. Then add the lime juice, garlic powder and onion powder and for another ten minutes allow it to simmer.

With the chicken mixture in the skillet, add a cup of soup mixture. The soup mixture, remaining has to be spread on the bottom of a suitable baking dish. Each tortilla has to be filled with the chicken mixture and Cheddar cheese sprinkled over the chicken filling before the tortillas are folded. For topping, reserve half of the shredded cheese. Tortillas are to be folded over the filling and placed in the pan. The sauce has to be evenly poured and covered by the cheddar cheese. The chopped green onions are to be sprinkled along with the olives on cheese top. Then for about twenty five minutes, it has to be baked in the Oven, heating the filling and ultimately leaving the cheese bubbling.
