In the present days, despite earning by two persons in a family, it is increasingly becoming difficult for both ends to meet. One source of being economical would be to buy only the required and not to waste any food materials. It is common in any household; people do not know what to do with the leftovers after the dinner or a party. You will be delighted to go though this recipe as this recipe uses Leftover Rotisserie chicken as one of its main ingredients in making a tasty dish for your family. The other important ingredient in this recipe is Couscous that has become very popular in France, and other European countries. In every 100 grams of Couscous, it contains 3.6 gm of protein. The preparation time for this dish is about 15 minutes and it takes another 15 minutes for its cooking. This dish could yield to about four servings.

Ingredients required

  • 2 cups rotisserie chicken, coarsely shredded
  • 1 cup couscous, preferably whole wheat
  • Four fresh carrots that are sliced thinly and of medium size Greek yogurt / any other hot sauce
  • 1 teaspoon of ground ginger
  • 3 tablespoons of butter that is unsalted Half cup of sliced almonds
  • 3/4 teaspoon of ground cinnamon
  • 4 scallions, roughly chopped, light green and white parts alone fresh cilantro, half cup to be chopped roughly and some more for the sake of topping
  • 1/4 cup of golden raisins Freshly ground pepper
  • salt to taste

    Preparation method

    Boil 2 1/2 cup of warm water in a saucepan over medium heat. Stir in the ginger, 1/2 teaspoon of cinnamon, a teaspoon of salt and 1/2 teaspoon of pepper. Now add few carrots and gently cook for about 4 minutes until they become tender and crisp. Retain the left over liquid after draining out the carrot and keep aside. Chicken and couscous are to be placed in a medium sized bowl and pour a cup of hot cooked liquid and stir in gently and cover with a wrap and set aside for about 5 minutes. Using a fork, gently fluff the couscous.

    Melt the unsalted butter in a perfect skillet and gently heat it on a high beam. Add almonds, scallions, resins and the remaining 1/4 teaspoon of cinnamon. Stir and cook for about 3 minutes until all the nuts you put are roasted. Now, stir in the cilantro. Dividing the chicken and couscous in bowls, top them with carrots and the cooked liquid. After sprinkling all of the mixture (almond), now add some more cilantro, top with yoghurt, and serve.

    General Tips

    If you are suffering from colds and flu, then you need to drink elderflower tea. Put about two to five grams of dried flowers into a cup of boiling water to make an infusion. Leave the mixture to infuse for about five to ten minutes, then strain. Drink this at least thrice per day. You can also try drinking yarrow, ginger and peppermint tea if you want.
