Jamie Oliver chicken recipes

This chicken recipe would help you to make a nice, easy and perfect roast chicken with full of flavor. The dish could be used for four to six servings.

Ingredients required

  • 1 chicken, approximately 1.6kg
  • 2 medium Onions, finely chopped
  • 2carrots, nicely sliced into fingers
  • 1 lemon
  • 2 sticks of celery
  • 1 bulb of garlic
  • Olive oil
  • Freshly ground black pepper
  • Salt
  • Fresh thyme, rosemary, bay or sage

    Preparation Method

    Preheat your oven to 240C/475F

    Chicken should be taken out of the Fridge and kept outside for 30 minutes before cooking.

    Chop the vegetables and break the garlic bulb and keep the cloves unpeeled. Place all the vegetables and garlic in the middle of a large roasting tray and drizzle with olive oil. After drizzling the chicken with olive oil, use pepper and salt to season the chicken by rubbing it all over. Prick the lemon all over and place inside the chicken's cavity, along with herbs. Place the chicken on top of the vegetables in the roasting tray and put it into the preheated oven. Turn the heat down immediately and cook the chicken for an hour and twenty minutes. In case you want to have roast potatoes and vegetables, this is the right time to take advantage and keep them into the Oven during the last hour of cooking.

    Baste the chicken halfway through cooking and if the vegetables look dry, splash water to the tray to stop them from burning. After the cooking, transfer the chicken to a board to cool for 15 minutes.When cooked, take the tray out of the oven and transfer the chicken to a board to rest and Cover with tin foil.

    Carving the chicken

    Cut away any string from the chicken and remove the wings (it could be added to gravy) Angle the knife along the breastbone and carve the chicken.

    Regarding the fussy bits, you can very well use your fingers to remove all the meat, and also turn over the chicken to get the tasty, juicy bits to flow out. Now you will be having a platter full of lovely meat that you can serve with your piping hot gravy and roast veg.
