Healthy chicken recipe

Ingredients

  • 4 boneless, skinless chicken breasts (about 1 3/4 lbs)
  • Small red skinned potatoes, quartered 2 lbs
  • Chopped parsley or fresh cilantro 2 tablespoon
  • Extra virgin olive oil 3 tablespoons
  • Six Gloves of Garlic finely chopped
  • 1 1/2 tablespoons of light brown sugar
  • 1/2 teaspoon of cumin seed
  • Pinch of Ref Pepper flakes
  • Freshly ground pepper - to taste
  • Lemon 1/2 juiced, 1/2 cut Salt to taste

    Directions for preparation

    Preheat the Oven to 425 degrees F.

    Take a bigger bowl, place the potatoes and add to it a tablespoon of olive oil, 3/4 spoon of salt, cumin seeds and pepper in the required quantity to taste. Toss the potatoes, then spread them in a large baking dish, and roast for about 25 to 30 minutes, until the potatoes become golden brown. In the meantime, pour two tablespoons of olive oil in a small skillet and heat. Then by adding finely chopped garlic cook by stirring frequently to make it light golden brown in color. Remove the skillet, add lemon juice, red pepper flakes and brown sugar and stir them well.

    After removing the baking dish from the Oven, arrange the chicken breasts in the middle and add the potatoes to the sides. Use salt and drizzle the garlic mixture to season the chicken. Return the baking dish to the Oven and wait for about 20 minutes for the potatoes become tender and the chicken are cooked. Now, remove the baking dish from oven and transferring the chicken to the cutting board, neatly slice them. After adding cilantro to the baking dish, toss the chicken with potatoes.
