Healthy chicken pasta recipes

Pasta is prepared in three different types of dishes. First being, pasta cooked and served on a plate with a sauce; Second, pasta used as a part of the soup and the third being pasta incorporated into a dish and then baked. Though Pasta is a simple dish, it comes in so many varieties as it is one of the most versatile food items. Thick sauces are preferred for using with tubular, short and twisted pastas. Our recipe for healthy chicken pasta is of the first variety that is served on a plate. The preparation time for this dish is about 15 minutes and the cooking time is 25 minutes. This dish prepared in about 40 minutes can be served to six people. Cooking this dish is easy and fun.

Ingredients required

  • 1 1/2 pound chicken breast, boneless, skinless, cut into pieces of an inch
  • 1 tablespoon of olive oil
  • unsalted butter, 2 tablespoons
  • finely chopped yellow onion, 1 cup
  • chopped green onion tops, 1/2 cup
  • heavy cream, 1 1/2 cups
  • 1 cup diced tomatoes
  • 1/4 cup grated Parmesan
  • 1 tablespoon minced garlic
  • chopped fresh parsley leaves, 2 tablespoons
  • finely chopped pepper, 1 tablespoon
  • 1/2 cup reserved pasta cooking water
  • kosher salt, 1/4 cup
  • Salt, 1 1/2 teaspoons
  • 2 tablespoons Essence
  • For preparation of essence

  • 2 1/2 tablespoons paprika
  • 2 tablespoons salt, garlic powder
  • 1 tablespoon each of onion powder, oregano, black pepper, cayenne powder and dried thyme
  • Preparation method

    Boil a gallon of water in a stockpot and add kosher salt. Add the linguine in the pot and stir until the water returns to boil. Pasta should be cooked for about 12 minutes to become tender but should have a bit of hardness. In the meantime, sauce can be prepared. Over medium heat set a ten inch saute pan and add olive oil and butter. On noticing the butter melting, season the chicken with half a teaspoon of salt and a spoon of essence and add to the pan. Saute the chicken for about two minutes until browned on all sides. The chicken is to be removed and kept aside. In the same pan, add onions and the finely chopped pepper and saute for about five minutes until the onions become translucent and lightly caramelized. Add garlic and saute for about thirty seconds and then add a tablespoon of remaining essence and a teaspoon of salt and the chicken and let it boil. Let the sauce be cooked for an additional two minutes until it thickens to half. Now add linguine, tomatoes, and water to the pan, toss and cook for about five minutes. After removing the pan, add the chopped green onions, parsley and Parmesan to blend. Serve the dish hot.

    General Tips

    If you are suffering from sore throat, you can use the traditional sore throat gargle - a squeeze of lemon juice in a glass of warm water. It is ideal because it creates an acidic environment hostile to bacteria and viruses. Add a spoonful of honey especially manuka honey to all hot drinks and gargles if you want.
