Healthy chicken dinner recipes

Ingredients required

  • 4 skinless, boneless, chicken breasts, trimmed (1-1 lbs)
  • 8 ounces orzo, preferably whole-wheat
  • 1/2 cup Romano cheese, finely shredded
  • Frozen artichoke hearts, nine oz pack
  • 1 plum tomato, diced
  • 1/2 cup of chopped sun-dried tomatoes
  • 1/4 teaspoon of freshly ground pepper
  • 1 clove garlic, peeled
  • 3 teaspoons of chopped fresh marjoram
  • 3 teaspoons extra-virgin olive oil
  • 1 tablespoon red-wine vinegar
  • 1/4 teaspoon salt
  • 1 cup water
  • Preparation method

    In a large pan of boiling water cook the Orzo for about 10 minutes until it becomes tender, drain and rinse. By using a blender, blend a cup of water, plum tomato, vinegar, garlic, 1/4 cup sun dried tomato, 2 teaspoons of marjoram and two teaspoons of oil. Blend them to a stage where just a few chunks remain. The chicken has to be seasoned with pepper and salt on all the sides. In a large skillet, heat the remaining Olive oil over medium heat, add the chicken, cook for about 3 to 5 minutes per side, so that the chicken becomes golden brown, and ensue to cook fully until no pink color of the chicken is visible. Transfer the chicken to a plate and cover with a foil to keep it warm.

    Pour the tomato sauce in a pan and bring to boil and transfer 1/2 cup to a small bowl. In the remaining sauce, add the 1/4 cup of sun dried tomatoes along with Orzo, cheese and artichoke hearts cook and stir for about two minutes until heated through.Slice the chicken and top it on each portion of pasta with the sliced chicken and the tomato sauce and sprinkle the remaining cheese. Your chicken is ready to be served.
