  • 4 boneless, skinless chicken breast fillets
  • Button mushrooms 7 oz
  • 1/3 carrots, finely sliced
  • 14 small shallots, peeled
  • Chopped fresh parsley
  • Garlic cloves 2, minced
  • 3/4 spoon dried thyme
  • 3/4 spoon dried oregano
  • 2 rashes pancetta, sliced
  • 1/2 tablespoon of Olive oil
  • 12 chicken stock cubes
  • Bay leaf
  • 1 tablespoon flour
  • Red Burgundy wine 225 ml
  • Required amount of water
  • Preparation method

    Preheat oven to 170 C / Gas 3

    Heat the olive oil in a large frying pan over medium heat. For about 15 minutes, saute the chicken to get lightly browned on both the sides. During the end of browning, add the diced pancetta. Add wine, shallots, garlic, carrot, thyme, oregano, pepper, bay leaf and stock cubes. Bring them to boil and after reducing the heat, let it simmer for about 20 minutes. The chicken should be cooked and no pink color inside of the chicken should be seen.

    Transfer the chicken, carrot, mushrooms and onions to a platter, after discarding the bay leaf. Cover it to keep warm and set the dish aside.
