Filipino chicken recipes

Ingredients required

  • 3/4 lb. of cooked and shredded chicken
  • 12 pieces of flour tortilla
  • 29 ounces of enchilada sauce
  • 1 teaspoon of ground cumin
  • 2 cups of sour cream
  • 1 (16 oz.) can refried beans
  • 1 1/2 cup of cheese
  • Preparation method

    Oven to be Pre heated to 350 degrees F.

    Season the shredded chicken with the ground cumin, mix well and keep aside. Scoop a 1/2 cup of enchilada sauce, pour into a baking dish, and spread uniformly all over the dish. Arrange half of the shredded chicken on top and top with cheese and enchilada sauce. Place four pieces of tortilla over the enchilada sauce and spread some of the red fried beans and sour cream over the tortillas. Top the enchiladas with the remaining chicken. Further, add the cheese and enchilada sauce on top. The last layer has to be made by arranging the last left over of four flour tortillas over the enchilada sauce. The remaining refried beans, enchilada sauce and the sour cream are to be spread over the tortilla pieces. Top them with cheese. Then bake the Chicken Enchilada Casserole for about 40 minutes. Remove from the oven and the dish ready to be served.
