Preparation method of salsa
Use a food processor to coarsely prepare a puree of a cup of tomatoes, chives, cilantro, vinegar, pepper, salt, hot sauce and oregano. Add bell pepper and slight beat to incorporate. After transferring to a bowl, stir in corn and the reaming tomatoes. Taste, if required, add some more salt/ vinegar.
Cut the chicken into four equal portions. Use a bowl or a plastic bag to combine 1/4 cup of salsa, 1 1/2 spoon of oil, chili powder, garlic and two tablespoons of salsa drained liquid. Add the chicken pieces, shake and stir until the chicken is fully coated with the mixture. Marinate the chicken in fridge for two hours. Pre heat the grill to medium high. Remove the chicken from the fridge, shake of the marinade, and use a paper towel to dry the chicken. Brush the chicken pieces with oil. Grill the chicken, turning once for about 15 minutes or until the heat in the thickest part of the chicken goes to 165 degrees F. Now, the chicken is ready to be served with salsa.
