Chicken and potato recipes

  • Preparation method

    Preheat the Oven to 500 degrees F.

    Place a large cast-iron baking dish or a rimmed baking sheet on the rack of the Oven. In a large microwave-safe baking dish, place the, garlic, olive oil, potatoes and 1-tablespoon water, adding 1/2 teaspoon salt and toss to coat. Covering with plastic wrap, pierce the plastic with a knife in a few places and microwave 8 minutes to partially cook. In the meantime, dry the chicken by patting, and transfer to a bowl. Sprinkle the chicken with the paprika, 1/2 teaspoon pepper and 1 teaspoon. Adding 2 tablespoons parsley and the lemon juice and toss to coat. Now carefully remove the hot baking dish from the oven and add the potatoes and spread it to form an even layer. Sprinkle the onions on top. Roast for about 10 minutes until the potatoes turn to golden brown in color. Scramble the potatoes and lay the chicken pieces on top. Add accumulated juices from the bowl return to the oven and roast until the potatoes are tender and the chicken is cooked through for, about 12 minutes. Remove from the oven and top with the remaining parsley. Serve the dish with the lemon wedges.
