Chicken and asparagus recipes

This useful recipe will help you to make a tasteful dish of Stir-fry Chicken and asparagus. There are three types of asparagus. They are known as white asparagus, Black asparagus and white asparagus. The black or purple asparagus differ from its white and green counterparts by having high sugar content and low fiber levels. Ingredients required

  • 1 lb chicken breasts, boneless, skinless
  • 3/4 cup of chicken broth or water
  • 2 bunches of medium asparagus, 2 lbs
  • 2 tablespoons vegetable oil
  • 1 tablespoon of dry sherry
  • 1 tablespoon of soy sauce
  • 2-inch piece peeled fresh ginger sliced
  • 2 clove garlic, minced
  • 1 tablespoon of cornstarch
  • 1 bunch of scallions, thinly sliced
  • 1 tablespoon of sugar
  • 1 1/4 teaspoons of kosher salt
  • Brown or white rice
  • Preparation method

    The boneless chicken breasts are to be free zed for about 30 minutes and then sliced into thin pieces or strips. In a shallow bowl, add sherry, a teaspoon of salt, a teaspoon of the cornstarch, half of the garlic and ginger, sugar, and the soy sauce. The mixture in the bowl has to be marinated at the room temperature for about fifteen minutes. The remaining cornstarch is to be mixed with the chicken broth thoroughly.Heat 1 tablespoon of vegetable oil in a large nonstick skillet over high heat. Add the scallions, asparagus, ginger, remaining garlic and 1/4 cup of water. Season the mixture with 1/4 tsp of salt.

    Stir fry the asparagus for about three minutes until it attains bright green color and become crispy in nature. Asparagus is to be transferred to a shallow bowl. Heat the skill to high heat and add a tablespoon of vegetable oil. Now, add the chicken and stir-fry for about three minutes until it loses its pink color and turns to golden brown in color. Return the asparagus to the pan and toss to heat through. Remove the stir-fry to a serving platter and divide among four plates. Serve with rice.
