Chicken tagine recipes

This recipe is easy to make, delicious to eat and the spices added offer your taste buds an unforgettable taste. If you think that the preparation time taken for cooking this dish is longer, you will feel happy that the time was well spent, once you taste the cooked dish. The preparation time is about eight hours and cooking time is an hour. This dish could be served for eight people.

Ingredients required

  • 2kg chicken drumsticks and thighs
  • 1 liter of chicken stock
  • 6 large onions, finely diced
  • 9 cloves garlic, minced
  • 4 Tbsp ground ginger
  • 2 preserved lemons, chopped
  • 3x400g tomatoes that are chopped finely
  • 500ml tomato juice
  • 300g dried apricots, halved
  • 200g blanched, flaked almonds
  • 6 Tbsp of olive oil
  • 6 Tbsp of vegetable oil
  • 3 Tbsp of clear honey
  • 150g raisins
  • 2 tsp of strands saffron, wet
  • 5 Tbsp of ground cinnamon
  • 2 tsp of cayenne pepper
  • 5 tsp of ground black pepper
  • 4 Tbsp of paprika
  • 3 Tbsp of turmeric

    Preparation method

    Preheat the oven to 150C.

    add the black pepper, cayenne pepper, ginger, paprika, cinnamon and turmeric in a little bowl and allow it mix well. Add the chicken pieces in a bigger bowl. Now mix together along with the spice mix. Cover the chicken and leave it in your refrigerator all of the night. Use a large dish (casserole) and heat three tablespoons of each of the olive oil and vegetable oil. Add the onions and the left over spice mix. Now cook for about ten minutes over low heat until the onions become translucent. Add in the garlic and saute.

    Use a heavy griddle pan and heat up the left over oil. When the oil becomes hot, place the chicken pieces in the pan and cook for about five minutes. Turn over the chicken pieces and cook for five minutes. Chicken is to be removed from the pan and placed in the dish (casserole). Add the juice of tomato into the pan and mix well. Scrap up the bits sticking to the bottom, and add the pan contents into the casserole dish. Add the honey, stock, saffron, remaining juice of tomato, apricots, chopped tomatoes, flaked almonds, lemon and the raisins in the casserole dish. Bringing to the boil, now slowly cover it with a lid and cook in a preheated oven for 45 minutes. The chicken should be tender. You favorite dish of chicken tagine is ready to be served.

    General Tips

    Ginger works so well at combating nausea that some cancer specialists now recommend it as a way to counteract the severe nausea associated with chemotherapy. Here is a recipe for the same. Steep 2 teaspoons powdered dry ginger or grated fresh root ginger in a cup of hot water for about 10 minutes. The tea works better at preventing nausea than at stopping nausea once it starts. It is advisable to drink hot water after you consume heavy meals especially the one with chicken dishes. The reason it hot water washes away oil and fat and makes it easy for digestion. The water needs to be warm and not boiling.
