Chicken stuffing recipe

This chicken stuffed recipe made of chicken, Feta and Broccoli will make your kids crazy about it and you will feel happy to pack it for their lunch at school. The stuffed chicken is not only healthy but also delicious. In case you want to substitute chicken with any other meat, you are welcome and you can use the same ingredients listed below.

Ingredients required

  • 4 Chicken Breasts, Boneless, Skinless
  • Broccoli florets, 2 cups
  • 2 Green Onions
  • Basmati Rice 1 1/2 cup
  • Mixed Frozen Beans, 4 cup
  • Butter, 1 tsp
  • Crumpled Feta Cheese, 1/2 cup
  • 1 tsp Original Seasoning
  • 4 tsp Prepared Garlic
  • Broccoli Mixture
  • 1 tsp Olive Oil
  • 1/2 cup non-alcoholic Dry White Wine
  • Chicken Broth 1 can (10 oz)
  • 3 cup Water
  • 1/2 tsp Lemon Pepper
  • 1 Tbsp Soy Sauce

    Preparation method

    Pre heat the Oven to 375 degrees F.

    Broccoli and green onion are to be chopped finely and kept in a bowl. Stir in the crumbled Feta and spice and keep aside. Make slices out of the thickest part of the chicken breast and the pieces so sliced should be thin in size. Sprinkle the garlic on one side of the chicken breast. Then apply the Broccoli mixture evenly in the center of each large piece, on top of the garlic already sprinkled. Now roll the breast around the stuffing and secure with a toothpick. Heat the oil in a large frying pan at medium high. Add the chicken and cook until the rolled chicken become brown on all sides. Add the non-alcoholic wine and chicken broth to the pan once all the chicken breasts are browned. Allow it to simmer at medium heat. Keep on turning for a few times until the liquid evaporates.

    In the meantime, rinse the beans in a colander. Combine rice and water in a large microwave safe pot and cook for about ten minutes. Stir and cook medium for ten minutes. Set aside the rice in a Bowl. Use a large frying pan, heat the butter. Add beans, lemon, pepper and soy sauce. Cook them at medium low heat until the beans become tender. Now arrange on a plate, the stuffed chicken, vegetable and rice and feast your friends.
