Chicken spinach recipe

This Chicken, spinach recipe is a healthy curry recipe packed with all the goodness of spinach with your favored chicken meat. It takes less than 30minutes of preparation time and another 45/60 minutes of cooking time. The dish could be used for six servings. Ingredients required for this dish

  • 1lb chicken, skinless and washed
  • Top of Form
  • Bottom of Form
  • 1lb fresh spinach leaves, washed
  • 3 Large sized tomatoes cut into quarters
  • 1 large Red Onion chopped
  • 4 green chilies, prick using a knife
  • Two small pieces of Ginger, peeled and finely chopped
  • 4 tablespoons of plain Yoghurt, stirred
  • 6 teaspoons of vegetable oil
  • 3 pods of Black cardamom
  • 2 bay leaves
  • Cinnamon two small pieces
  • 10 cloves of Garlic, finely sliced into pieces
  • 1/2 teaspoon of spice mix powder
  • 2 teaspoons of ground coriander
  • Black pepper, freshly grounded
  • Salt to taste
  • Six cups of cooked rice (rice to be cooked according to instructions on the packet)

    Preparation method

    Make use of a food processor to blend the spinach to a state of pure by using two tablespoons of water so as to loosen the mixture and keep it aside. Heat the vegetable oil in a pan over a medium heat, add the cinnamon, cardamom pods and bay leaves, and fry for about 30 seconds. After adding the onion and the green chilies continue to fry for about 5 minutes, or until they are caramelized. In the meantime, blend the ginger, tomatoes and garlic to a smooth paste by using a blender. After the onions become caramelized, add the paste, chicken pieces and the remaining spices to the pan and stir them well to combine.

    Add required amount of salt for seasoning, stir regularly, and simmer for 15 minutes. After adding the yoghurt, stir well and continue to simmer the mixture until the sauce is thickened and almost there is no liquidity. After adding the spinach pure, let it to simmer for another 10 minutes or until the chicken has cooked through.
