Chicken scampi recipe

This recipe is so easy to prepare and also delectable and you can surprise your family members when they visit you on holidays. Every serving of this wonderful dish is loaded with calories that are bound to give the required energy for all members of your family.

Ingredients required

  • 4-6 chicken tenderloins
  • Minced onions, two tablespoons (you may use dried or fresh)
  • 1-2 large sized red onions
  • 1 cup of flour
  • 2 red bell peppers
  • 1/2 cups of chicken broth
  • 1 16 oz box angle hair pasta
  • 1 cup of heavy cream
  • 4 tablespoons of olive oil
  • 3 tablespoons of butter
  • 1 teaspoon of minced garlic
  • 1/2 teaspoon of red pepper flakes
  • 1 tablespoon of dried parsley
  • 1/2 teaspoon of black pepper
  • 1/2 teaspoon of Italian seasoning
  • 1/2 teaspoon of fine sea salt
  • Salt and pepper
  • Parmesan cheese, freshly grated for garnishing

    Preparation Method

    Use a medium sized saucepan to add butter, minced onion, chopped garlic and saute over medium heat for about two minutes ensuring that you do not char the garlic. After adding the chicken broth, toss in salt, Italian seasoning, red pepper flakes, pepper and dried parsley on medium low heat, stir and simmer for about fifteen minutes. Then add the heavy whipping cream and allow it to simmer on low without boiling for about 10 minutes. Boil the angel hair pasta as per instructions on the carton, in a separate pot. Sprinkle your chicken tenders with pepper and salt to season and also give a dip in flour.

    Use a skillet over medium heat, and after adding three tablespoons of olive oil fry the chicken for about 3-5 minutes on each side until they become golden brown and cooked through. Cut your onions and bell peppers in julienne strips and ensure to remove all seeds and the white membrane on the inside. Use the same skillet that the chicken was cooked in, and add another tablespoon of olive oil and saute the bell peppers and onions. Have them cooked on high for 3-5 minutes until they become soft and caramelized. Add half of the creamy garlic sauce and the pasta and stir to combine the sauce. Add all the onions and bell peppers and mix into the pasta. Arrange the pasta on plate and add the chicken on top. Drizzle more sauce over the pasta and the chicken. Garnish with freshly grated Parmesan cheese.

    General tips

    Do not take red meat and substitute your diet with healthy protein obtained from salmon fish. This salmon fish also provide omega-3 fatty acid, which is a polyunsaturated fat. Flax seeds and walnuts are also rich source of polyunsaturated fat. Polyunsaturated fat and unsaturated fat increases high-density lipoprotein (HDL) which is regarded as good cholesterol so that it will decrease the risk of heart attack. Include foods such as whole grain bread made up of oats, barley and wheat in your diet. Try to use new varieties of whole grain as you can produce heart healthy meals from it.
