Chicken risotto recipes

The preparation time for this dish is about 20 minutes and the cooking time is another twenty-five minutes. This dish could be used for two servings. The dish is full of energy and has protein, carbohydrates, fat, sugar and sodium.

Ingredients Required

  • Butter 1 tablespoon
  • Onion of medium size -1, diced
  • Garlic cloves 2, crushed and peeled
  • 1 medium onion - diced
  • 2 cloves garlic - peeled and crushed
  • Arborio risotto rice 175g
  • White wine 1 glass
  • 200g cooked diced chicken
  • Chicken Cubes (Reduced Salt) in 450ml of boiling water (or) 3 teaspoons of Chicken Reduced Salt Stock Granules in 450ml water
  • Green beans /asparagus / peas / broad beans
  • Parmesan cheese
  • 2 tablespoons chopped basil

    Preparation method

    Butter is to be melted in a heated saucepan. Add to it the diced onion and cook for about four minutes on a medium low heat. Add garlic and for an additional two minutes, cook for another two minutes. After adding the risotto rice, stir well. Wine to be added and t be cooked for about five minutes. Constantly stir until almost all the liquid is absorbed. Add to it 1/3rd of the chicken. Let it simmer and continue to stir until all the liquid stock gets absorbed. Use the other portion of the chicken stock and stirring to be continued to simmer until the liquid gets absorbed. Now add the 200 g of the sliced and cooked chicken along with asparagus, peas, and green beans (chopped), or and the remaining stock. Ensure absorption of all the chicken stock by continuous stirring and then add the wine and cook for about fifteen minutes.

    If you find out that, the stock has been absorbed, use some more water to continue the cooking, and if some more liquid remain even after the completion of the cooking, heat can be increased a little. Before finishing the cooking, add basil and stir well. Taste a little bit of rice to test whether it is fully cooked and in case it is not fully cooked keep on with the cooking for some more minutes. The heating has to be turned off and the pan to be covered with a lid to keep the heat. Before placing the lid, do not forget to taste the cooked rice to find out whether it has come out nicely. Leave it for another five minutes in the same condition, and stir through the readily kept fresh cheese before you serve this delicious dish to your family and friends.
