    Ingredients required

  • 1 large Family Feast Roast chicken, cut into 6 or 8 portions (about 2kg)
  • 1 long fresh red chili, seeded, and very finely chopped
  • 2 garlic cloves, nicely crushed
  • 1 tablespoon of smoked paprika
  • Coarsely chopped fresh oregano, 2 tablespoons
  • 1 teaspoon of fresh thyme leaves
  • 1/4 cup of lemon juice (60ml)
  • 2 tablespoons of olive oil

  • 2 large red onions cut into wedges
  • 500g Golden potatoes, washed, and halved lengthways

  • Salad leaves (mixed) to serve

    Preparation method

    You need to preheat your oven to 200 degrees Celsius. Use an ovenproof baking dish or a large roasting pan to cook the chicken. Combine the chili, paprika, garlic, oregano, lemon juice, thyme, oil and sugar in a small bowl and stir well so that they combine to form a thick liquid. Season it well with pepper and salt. Pour the sauce mixture evenly over the chicken pieces and turn to coat on all sides of the chicken.

    After placing the onion and potato around the chicken, bake it in preheated oven, turning occasionally, for about 45 minutes or until the pieces of chicken become golden brown in color and cooked through. Then transfer to a plate and serve with lemon wedges and mixed salad leaves, if desired.
