Chinese chicken curry recipe

This chicken curry recipe is of Chinese style, which could help, you surprise your Chinese friends with this dish, when they visit you. The preparation time for making this dish is just 15 minutes and it takes another 40 minutes for its cooking. Two servings could be had from this dish. This Chinese chicken curry is easy and simple to make with nice flavor by just adding few available spices to it.

Ingredients required for the chicken

  • 500 gm of skin removed, chicken breast fillets
  • 2 spring onions, sliced
  • 1 red pepper, finely sliced strips
  • 1 medium red onion, sliced
  • 100 gm cabbage, washed and shredded
  • 1 handful bean sprouts
  • 1 inch fresh ginger, peeled and finely sliced
  • Freshly ground white pepper
  • 1 tablespoon of groundnut oil
  • 1 tablespoon of rice wine or dry sherry
  • 1 tablespoon of light soy sauce
  • 2 star anise
  • Salt to suit your taste
  • Ingredients For the curry paste

  • 1 teaspoon of turmeric powder
  • 1/2 teaspoon of ground coriander
  • 1 tablespoon of Chinese chili bean paste
  • 1 table spoon of rice wine or dry sherry
  • 1/2 teaspoon of Chili powder
  • 1/2 teaspoon of mild curry powder
  • Preparation method

    For making the curry paste

    Placing all of the curry paste ingredients into a food processor, blend them to a smooth paste and keep aside.

    For making the chicken

    Boil a pan of water and then reduce it to a simmer. Add the, rice wine or sherry, fresh ginger, star anise, and chicken breast. Cook them for about twenty five minutes or until the chicken is fully cooked. The chicken had to be removed and shredded into large pieces. Remove the impurities may have formed on the top of the stock and keep the stock aside. Mix the chicken with the curry paste. After heating the Wok, add groundnut oil and fry the chopped red onions for about two minutes until softened.

    Add the Chinese leaf, chicken, red peepers, sprouts and spring onion. Stir for about 2 minutes and season with light soy sauce. This Chinese chicken curry can be served with plain cooked rice/ jasmine rice along with a cup of hot chicken sauce and your guests will have a great satisfaction of eating a Chinese dish. While serving you may have to add a little more or of less curry paste, depending on your taste and the taste of your guests.
