Chicken Cacciatore recipes

This chicken Cacciatore recipe is nutritious and is full of flavor. Originated in Italy, Cacciatore in Italian means "hunter". Chicken Cacciatore is mostly made with braised chicken and is the most popular dish with the Italians. The basic cacciatore is made by heating olive oil in a pan and roasting the chicken marinated with salt and pepper and using the fat and oil, the vegetables would be fried. After the introduction of the Original dish, many variations have been brought out with various ingredients that are available in a particular region. The dish is prepared in about an hour's time over low simmer and is best served with pasta or bread along with it.

This dish demands a preparation time of about 15 minutes and another 40 minutes of cooking time. This dish could yield four servings. Each serving is rich with energy, fat, carbohydrate, protein, saturated fat, carbohydrate, dietary fiber, cholesterol and sodium.

Ingredients required

  • 2 chicken breasts, halved crosswise, with backbone and skin
  • Chicken thighs 4
  • all purpose flour, 1/2 cup
  • olive oil 3 tablespoons
  • 1 large red bell pepper, chopped
  • 1 onion, finely chopped
  • 1 can of diced tomatoes with juice
  • Chicken broth, 3/4 cup
  • dry white wine, 3/4 cup
  • 3 garlic cloves, finely chopped
  • fresh basil leaves, 1/4 cup coarsely chopped
  • freshly ground black pepper, 1 teaspoon
  • 3 tablespoons of drained capers
  • dried oregano leaf, 1 1/2 teaspoons
  • 2 teaspoons salt ( to taste)

    Preparation method

    Season the Chicken pieces with a teaspoon each of pepper and salt. Saute the chicken pieces in the flour, coat them lightly, and keep aside. Use a heavy pan and pour oil and heat over medium high. Then add the chicken pieces to the pan and saute for about 5 minutes until they become golden brown in color. If you feel sauteing the chicken in a single attempt is difficult, saute the chicken pieces in two batches. Remove the chicken and keep in a separate plate. Add onion, garlic and bell pepper in the same pan over medium heat for about 5 minutes until the onion become translucent.

    After seasoning with pepper and salt, add wine and allow simmering for about 3 minutes to allow the liquid to be reduced to half. Toss with tomatoes, capers, oregano and the chicken broth and return the chicken pieces and coat them with the sauce. Allow the sauce to simmer over low and medium heat until the chicken breast is cooked for about 30 minutes and the thighs for about 20 minutes. Using a tong, transfer the chicken to a separate plate. Spoon the sauce over the chicken and decorate with basil. You can spoon any excess fat that you may find in the gravy and then serve.
