Boneless chicken recipe

This recipe is for preparing grilled chicken by using boneless chicken with a marinade of Fresh tomato salsa. The dish is flavored with fresh oregano, chives and cilantro. The salsa you are going to make is capable of pairing with any of the meat dishes, tofu or fish. If you want your presentation of the boneless chicken to be colorful, simply serve the chicken along with salsa, brown rice and a green salad. You have to place a cup of tomatoes in a food processor with chives, cilantro, oregano, vinegar, hot sauce, pepper and salt and process until they are coarsely pureed. Adding the bell pepper pulse to incorporate, stir in corn and the remaining 1/2 cup tomatoes. To suit your taste you can add additional hot sauce, vinegar, pepper or salt.

    Chicken breast has to be cut in half on the diagonal to make four roughly equal portions. Use a shallow bowl (preferably glass or porcelain) and combine together 1/4 cup of salsa, garlic, 1 1/2 tablespoons of oil and 2 tablespoons of liquid drained from salsa. Toss on the chicken pieces, stir them into the mixture, and make the paste cover all the chicken. Cover the chicken and marinate for about two hours in the refrigerator. Remove the chicken, allow it to thaw and shake off the marinade thoroughly and pat the chicken pieces dry with paper towels. On both the sides of the pieces, brush with the remaining oil. If you want to broil, place the chicken on a well-oiled broiler pan or wire rack set on a baking sheet.
