    Basil chicken cooking

The boneless chicken has to be cut into bits of small size. Gently peel of the garlic, do chilly rinsing and mince it. If you really look forward to take out oil and the awesome flavor off the chilies and garlic, they need not be grounded to super fine. Keep the handful of basil rinsed in water and ready with you. Keep the pan on maximum heat and slowly add 1 tablespoon oil. When you see the oil has become hot, it is time to add garlic and chilies to it. For almost 20 seconds fry them until they become fragrant in oil. Do not deep fry or char them. Toss in the chicken and stir and fry continuously for about three minutes till all the pieces get fully cooked, turn into golden brown in color and all the color of pinkness goes away. When it starts getting dry add a little amount of water and add a teaspoon of sauce (Oyster), half teaspoon of sauce of soya, half teaspoon of sugar and soya sauce that is dark. Now stir it for another thirty seconds. Now, toss in the handful of Basil, mix it well with chicken. Now switch off the heat. After about five seconds, the Basil is wilted and is further cooked from the chicken's heat in the pan. Too much or too long cooking of Basil may make it lose its flavor and would become chewy. Serve the Basil chicken with, fried egg and cooked rice.
