Barbecue chicken recipes

Ingredients required

  • 4 pounds of chicken with skin (legs, thighs, wings, breasts)
  • 1 cup barbecue sauce
  • Vegetable oil

  • Preparation Method

    First, the chicken pieces have to be seasoned. Coat all the chicken pieces with oil and sprinkle salt all over the chicken pieces. You have to set your grill for high heat. In case, you are using charcoal; ensure to keep one side of the grill cooler by employing fewer coals there. As the chicken has to be seared well, you must lay the pieces on the skin side of the chicken on the hottest part of the grill. Once searing done on one side, the pieces are to be moved away from the hot side to the cooler side. In case, you are using a gas grill, heat to be kept at medium low to ensure fine cooking of the chicken. Cover the grill and cook for about 30 minutes. Turn over the chicken and baste them with your favorite barbeque sauce, cover the grill and cook for another thirty minutes. Repeat the process for one more time of basting, covering and cooking the chicken. Now is the time to check whether the chicken is fully cooked. There are two ways of doing this. Inserting a thermometer in the fleshy part of the breast, if it reads 165 degrees F, consider it is cooked. The reading while checking the thighs should read 170 degrees F. In the absence of a thermometer, you can insert a sharp instrument in the thickest part of the chicken and if the juices pour and run clear, consider the chicken is fully cooked. In case, if you feel, the chicken is yet to be fully cooked, cook on low temperature for a few more minutes. Before serving, paint with barbeque sauce.
