Baked Fried Chicken Recipe

Ingredients required

  • 8 chicken pieces (breasts/ thighs/ legs/ wings)
  • 1/2 cup of all purpose flour
  • 4 cups of cornflakes
  • 3 cups of buttermilk
  • 2 tablespoons of Dijon mustard
  • 1 1/2 teaspoons of paprika
  • 3/4 teaspoon of ground sage
  • 1/4 teaspoon of cayenne pepper
  • Freshly ground, pepper
  • Kosher salt, to taste
  • Preparation method

    Preheat the oven to 425 degrees and place a rack in a roasting pan or on a baking sheet.

    After rinsing the chicken in cold water, use a paper towel and pat dry. Use a medium sized bowl to season the all-purpose flour with salt and 1/4 spoon of freshly ground pepper. Saute the chicken pieces through the flour to get the chicken fully coated and shake off the excess flour and set aside the chicken in a plate. You may discard the rest of the flour. Place the cornflakes in a sealable plastic bag and crush them, taking care to push out the air. Then run over repeatedly with a rolling pin to crush the corn flakes and transfer to a wide bowl or a plate.

    Use a large bowl to mix mustard, paprika, cayenne pepper, sage and buttermilk to form a semi liquid state of mixture. Toss in the chicken pieces one by one in the mixture to be fully coated and then roll in the corn flour crumbs. Arrange all the chicken pieces on the rack and place in the preheated hot oven. Cook the chicken for about thirty minutes in lower heat to 375 degrees F. Ensure the chicken is cooked through and becomes crispy. You can also check this by piercing a sharp knife and if the juices run clear, consider the chicken fully cooked. Arrange the fried, baked chicken pieces on a plate along with greens and present the dish to your family and friends.
